    Get stuck in to brunch

    Start the weekend in style with this yum brunch idea from chef Dan Doherty. Food Ed Amy loves it and it’s a fab way to use up leftover sweet potato. You could use bacon or chorizo instead of salt beef. Enjoy!



    Salt beef & sweet potato hash

    Takes 1 hr Serves 2

    You will need
    200g cooked salt beef, cut into 1cm thick slices
    2 sweet potatoes
    2 corn on the cob
    1 avocado
    2tbsp hot sauce
    2 eggs
    20g butter
    Coriander leaves to garnish
    Olive oil

    1. Preheat the oven to 180ºC/Gas 4. Prick the sweet potatoes and bake in the oven for 45 mins. Remove and leave to cool.
    2. Heat a griddle pan on the hob and in a saucepan of boiling water, cook the corn for 3 mins then drain. Griddle the salt beef in a little oil for 2 min each side until browned. Set aside.
    3. Griddle the corn in a little oil until golden. While the corn is cooking, dice the avocado flesh. Peel the swet potatoes and halve lengthways. Season with salt and pepper.
    4. Fry the eggs in the griddle pan with a little butter. To serve, place the sweet potatoes on the plates and top with avocado, corn kernels, salt beef and the eggs. Drizzle over a little hot sauce and garnish with the coriander.
